Spinach and Feta Casserole with Brown Rice and Parmesan

Ingredients:

2 ½ cups frozen chopped spinach
3 cups brown rice
1 cup crumbled feta cheese
½ cup grated parmesan cheese
½ cup milk
2 eggs
2 green onions
½ teaspoon Worcestershire sauce
1 teaspoon dried thyme
½ teaspoon sea salt

Method:

3 cups brown rice is mixed with 4 ½ cups water and brought to a boil, over high heat. Then, the rice is covered with a lid and cooked for another 20 minutes over minimized heat. When done, the cooked rice is set aside to cool.In a medium bowl, 2 eggs are whisked with milk and salt. Green onion is chopped and dropped in along with Worcestershire sauce, dried thyme and blended.Meanwhile, the frozen spinach is thawed in a colander and very well drained.Transferred to a large bowl, the spinach is combined with the egg mixture and topped with the feta cheese and ¼ cup grated parmesan. The cooked rice is added and all the ingredients are well mixed, until incorporated.The oven is preheated, to 180 degrees C, and a casserole dish is greased with oil or cooking spray.The rice mixture is placed into the casserole dish, covered and baked for 40 minutes, then, uncovered and sprinkled with the remaining parmesan cheese. Placed back in the oven, the rice mix is cooked for another 15 minutes.
