Grilled Salmon Pineapple and Rice Lettuce Wraps

Ingredients:

Main

750 grams raw salmon
250 grams sugar snap peas
1 cup brown rice
10 lettuce leaves

For the dressing

½ pineapple, medium size
1 tablespoon fresh ginger, grated
1 tablespoon sesame seeds
2 garlic cloves
4 green onions
1/3 cup soy sauce
1/3 cup sesame oil
¼ cup honey

For honey glaze

¼ cup honey
1 teaspoon sesame seeds
1 teaspoon sesame oil
1 teaspoon soy sauce
Method:

The rice is washed and prepared according to the instructions.A dressing sauce is made by mixing ¼ cup honey with 1/3 cup soy sauce, grated ginger, sesame oil and the smashed garlic.They are well blended in a bowl, and the sesame seeds are added with 2 smashed garlic cloves.The salmon is inserted in a zip lock bag along with ¼ of the dressing suce, and refrigerated for 30 minutes, to marinate.The pineapple is peeled, cored and cut into long wedges, then sliced in spears. The pineapple spears are sprinkled with 1 tablespoon dressing sauce and set aside until the grill is heated.The cooked rice is mixed with 4 tablespoons dressing sauce and the sugar snap peas.When the grill is hot enough, the pineapple spears are added and cooked for 4 minutes on each side. When pineapple is cooked on one side, the salmon is added to the grill and also cooked for 3-4 minutes, flipping and sprinkling with dressing sauce. When done, both salmon and pineapple are removed from the grill and cut in pieces. The salmon is cut in 4 equal parts and the pineapple is diced.Honey glaze is prepared by mixing together ¼ cup honey, sesame oil and sesame seeds.For completing the dish, 2 lettuce pieces are placed on a plate and covered with ¼ of the cooked brown rice. Some dressing sauce is sprinkled on, and the rice is topped with a piece of grilled salmon. Diced pineapple is added, some sesame seeds, and honey glaze is drizzled all over the surface. The same procedure is applied for the rest of the ingredients, and the dish is ready to be served. Enjoy!
